Oak Smoked Gubeen Cheese Tom Ferguson is the herdsman. He inherited Gubbeen in the early 70’s when he married Giana who originally came from London of an Anglo-Hungarian family. Their work at Gubbeen has involved, almost from the earliest days of meeting, a quest to produce food on the farm - food that comes directly from the land they farm and reaches customers as seasonally and as freshly as possible. It is a 250 acre coastal farm in West Cork one mile outside the fishing village of Schull, the Atlantic Ocean bordering one boundary and Mount Gabriel to the North as a back drop behind the land, sheltering the pasture that has always supported the Gubbeen herd.

Arran Cheddar comes from a family business in the home farm of Brodick Castle. The Arran cheddar is a matured pasteurised cow’s milk cheese with a sweet finish.

Baron Bigod is a stunning brie-style cheese, with a rich, full, earthy flavour and a lingering finish. It's made by Jonny Crickmore from the milk of his own herd of Montbeliarde cows in Suffolk. Jonny likes the cheese best when its wrinkly coat has broken down the golden, buttery paste under the rind, while a thin line of lactic curd at the centre remains.

Fourme d'Ambert is a semi-hard French blue cheese. One of France's oldest cheeses, it dates from as far back as Roman times. It is made from raw cow's milk from the Auvergne region of France, this cheese is fruity and woody.

Capocollo Tipico Toscano: The Tuscan capocollo is a salami produced in Tuscany by the Ghiotti Toscani company. The piece of meat used for the production of the capocollo is the loin or coppa, a part which, as the name implies, is located near the animal's neck. The Tuscan capocollo is a salami that has a part of muscle and a fat part deriving from the musculature of the animal, this once spiced and seasoned, the taste remains sweet and tasty. The Tuscan capocollo is excellent tasted fine cut with a piece of bread and a good red wine. The salami is bright red in color, with fatty white veins, a typical aroma and sweet taste.

Salame Piccante a lovely well salted and balanced salami. Soft and will melt in the mouth, textured with a nice kick from spiced chilli. A medium spice flavour from Castilla Y Leon, Spain.

Chorizo Extra Cular Exuding tradition, this chorizo is made from the finest quality meats marinated in paprika and garlic, and air-dried to perfection to achieve an extraordinary texture and flavour from Castilla Y Leon, Spain
